NFT question

im just about to try my first grow in hydroponics. in a NFT system. its something ive never tried before. but i understand the plants grow bigger and faster. but my question is if i veg for a month. before i put them into flower. is it worth bending the plants side ways. or pinching the tops out to get a better yield. many thanks for any reply's
