New to coco need help with FloraFlex system

Im new to coco and trying to figure out the FloraFlex pot sizes. It seems most people grow coco in at least 3 gallon containers. The biggest container floraflex offers is 8 inches that look like they might hold 1.5-2 gallons of coco max. Are these supposed to take you all the way through flower? How big of plants are they expecting you to grow? Again, im new to coco so this may be standard size. Im just trying to figure it out.

Is AISI-302 stainless steel good for the reservoir with nutrients?

I am wondering if AISI-302 stainless steel parts are suited for permantent contact with the nutrients? It is because I am thinking about using a non return valve which in the reservoir which has AISI-302 grade parts. I don't know how aggressive the nutrients are to metals and if this kind of stainless steel might bleed toxic stuff into the reservoir.... Any idea? How to correct Rising pH/PPM runoff

Okay so this is my first run with Hydroponics. I have been running a top feed drip line system. I am running my girls in 6 inch rockwool cubes placed in 7 x 7 pots filled with hydroton.
