How much water in a dwc?

I've read and heard others say just enough for the roots to touch. I'm using 5 gallon buckets with about 3 gallons of water. I change the water weekly and when I do I notice my plants damn near drink it all leaving hardly in the buckets. I'm on week two of flowering and used this amount the whole time. I'm just worried about getting root rot. As of now my roots are massive and white and doing fine. So should I lower the level of water and change more often or leave it alone?

It is because I am thinking about using a non return valve which in the reservoir which has AISI-302 grade parts. I am modifying my Power Grower RDWC systems to have a 13 Gallon Reservoir. And in general my tendency has been to make my PPM stronger then what they actually consume nutrient wise! I have done this because they don't seem to burn and because they can consume the whole entirely of the reservoir in one day at their peak flowering cycle. In Veg my plants can drink as high as 1400 PPM which seems crazy. But as soon as I flip the light cycle this drops to about 600-700. .5 conversion And I... How to correct Rising pH/PPM runoff

Okay so this is my first run with Hydroponics. I have been running a top feed drip line system. I am running my girls in 6 inch rockwool cubes placed in 7 x 7 pots filled with hydroton.
